Latu was cited for punching and striking a Brumbies player in their match over the weekend.
The Waratahs are on a bye this week.
Meanwhile after Round two of the Super Rugby, the only sides that are yet to register a win are the Hurricanes, Reds, Sunwolves and the Kings.
The Hurricanes will meet the Blues at 6.35pm Friday while the Brumbies will face Western Force at 8.40pm.
